Recipe Description
This batter can be used to make waffles, too.  Top them with honey, syrup, or fresh berries and a sprinkling of powdered sugar.

2 Tablespoon(T)  butter
1 Teaspoon(t)  vanilla
2 Tablespoon(T)  vegetable oil
1 1/4 Cup(c)  buttermilk
1   egg
1/4 Teaspoon(t)  salt
3 Tablespoon(T)  sugar
1/2 Teaspoon(t)  baking soda
1 1/2 Teaspoon(t)  baking powder
1/4 Cup(c)  oatmeal, finely ground
1/4 Cup(c)  whole wheat flour
1 1/2 Cup(c)  flour


In large bowl, combine all dry ingredients and mix well with wire whisk to blend.  In small bowl, beat together egg, buttermilk, oil and vanilla until smooth.  Pour into dry ingredients and stir just until dry ingredients are blended.  Do not over mix.  In a nonstick skillet, melt a small amount of butter over medium heat and pour 1/4 cup batter for each pancake.  Cook until bubbles form on surface and edges begin to brown, about 3 to 4 minutes.  Carefully flip pancakes and cook 2 to 3 minutes longer, until pancakes are fluffy and golden brown.  Serve immediately.  Repeat with remaining batter.
