Recipe Description
Hoisin sauce is appealing to all, from toddlers to parents. It is available in most supermarkets, but if you have to make a special trip to get it, buy several jars. Unopened, it lasts indefinitely.

Ingredients

8 Ounce(oz)  vermicelli or chinese noodles
1/3 Cup(c)  hoisin sauce
1 1/2 Tablespoon(T)  white wine vinegar or rice wine vinegar
1 1/2 Teaspoon(t)  sugar
1 1/2 Teaspoon(t)  asian sesame oil
1 1/2 Teaspoon(t)  vegetable oil
1 Pound(lb)  skinless, boneless chicken breast, cut into small cubes
3 Clove(clv)  garlic, minced
4   scallions, sliced and divided

Preparation

Cook the noodles according to the package directions. If they are ready before you need to add them, rinse with cold water and set aside in a colander. In a small bowl, whisk together the hoisin sauce, vinegar, sugar and sesame oil. Set aside. Heat the oil in a large nonstick wok. Add the chicken and stir constantly until it cooks through. Stir in the garlic and all but 2 tablespoons of the scallions and cook for 1 minute more, until the scallions wilt and the garlic turns golden but not brown. Add the hoisin mixture and vermicelli to the wok. Toss until all is evenly coated with the sauce. Remove from the heat and garnish with the reserved scallions.
