This medium-bodied yellow cake is reminiscent of homemade traditional yellow cake.

1/3 Cup(c)  oil
1 Cup(c)  sugar
2   eggs
1/3 Cup(c)  milk
1 Cup(c)  potato starch
2 Teaspoon(t)  baking powder
1/4 Teaspoon(t)  baking soda
1/4 Teaspoon(t)  salt
1 Teaspoon(t)  vanilla extract
1 1/2 Teaspoon(t)  xanthan gum


Preheat the oven to 350°F. Lightly grease a 9 inch round or square baking pan. In a medium sized bowl, mix the oil with the sugar. Add the eggs. Mix until light and thick. This will take a minute or two with your mixer. Add the other ingredients. Beat well. The batter will thicken a little. Pour into the prepared baking pan. Bake for 30 to 40 minutes, until a toothpick inserted in the middle tests cleanly.
