Hot Applesauce Cake

Applesauce makes this loaf cake moist and tender. The raisins and walnuts give it character, along with aromatic spices. Serve for dessert, brunch or a sweet snack.

Ingredients

1 Cup(c)  shortening
1 1/3 Cup(c)  sugar
2   eggs
2 Cup(c)  flour
1 Teaspoon(t)  cinnamon
1/2 Teaspoon(t)  nutmeg
1/4 Teaspoon(t)  cloves, ground
1 Cup(c)  hot applesauce
1 Teaspoon(t)  baking soda, dissolved in 2 tbsp hot water
1 Cup(c)  raisins
1/3 Cup(c)  walnuts, chopped

Preparation

Cream shortening and sugar together until fluffy. Blend eggs in thoroughly. Sift dry ingredients together. Add them alternately with the hot applesauce to the creamed mixture. Beat well after each addition. Add soda dissolved in water and mix well. Flour raisins and nuts lightly and fold in mixture. Bake in greased 5 by 9 by 4 inch loaf pan at 350 degrees F for 1 hour and 10 minutes, or until firm in the middle when tested with a toothpick.
