Recipe Description
Hummus is a wonderfully easy dip to make and a healthy serving choice.  Make this recipe ahead of time, so the flavors have time to meld while refrigerating.

4 Clove(clv)  garlic
1 Can(cn)  chickpeas, well drained
1 Cup(c)  tahini (sesame seed paste)
1/4 Cup(c)  lemon juice, freshly squeezed
1/3 Cup(c)  water
3/4 Teaspoon(t)  salt, to taste
1/4 Teaspoon(t)  black pepper, to taste


Place the garlic, chickpeas, tahini, lemon juice, water, salt and pepper in a food processor or an electric blender and puree for 1 to 2 minutes, or until smooth and creamy.  Transfer to a serving bowl.  Cover with plastic food wrap and refrigerate for several hours.  Before serving, let stand at room temperature for 30 minutes.  Taste and add more salt or pepper, if desired.
