Recipe Description
This is a delicious adult dessert treat, that is simple to put together after a special meal. Sweet, tart, warm and cool, this is guaranteed to please the palate.

3 Cup(c)  low fat vanilla ice cream
2 Tablespoon(T)  brandy
1 Cup(c)  light white cranberry juice
1 1/4 Cup(c)  sugar
12 Ounce(oz)  fresh cranberries


Stir together first 3 ingredients and, if desired, brandy, in a heavy saucepan. Cook over medium heat, stirring often, 10 to 12 minutes or until cranberry skins begin to split. Remove from heat, and cool 10 minutes. Spoon 1/2 cup ice cream into 6 bowls. Top each with 1/3 cup cranberry sauce.

Additional notes

Tip: Store the sauce in an airtight container in the refrigerator up to three days, and reheat in a microwave-safe glass bowl on high for 1 to 2 minutes, or until warmed.
