Recipe Description
Nowadays, hot cross buns are traditionally eaten in Ireland on Ash Wednesday and on Good Friday. This practice would have been greatly frowned upon in the past when these were black fast days and the people would scarcely have had enough to eat, let alone spicy buns.

1 Pinch(pn)  salt
1   egg yolk, to glaze
2 Ounce(oz)  shortcrust pastry
1/4 Cup(c)  peel, chopped
1/2 Cup(c)  golden raisins
1/2 Cup(c)  currants
2   eggs
2 Teaspoon(t)  mixed spice
1/4 Teaspoon(t)  nutmeg
1/4 Teaspoon(t)  cinnamon
6 Tablespoon(T)  butter
3 1/4 Cup(c)  bread flour
1 1/4 Cup(c)  tepid milk
1/2 Cup(c)  superfine granulated sugar
1 Ounce(oz)  fresh yeast


Dissolve the yeast with 1 tablespoon of the sugar in a little tepid milk. Put the flour into a bowl. Rub in the butter. Add the cinnamon, nutmeg, mixed spice, a pinch of salt and the remainder ofthe sugar. Mix well. Beat the eggs and add to the milk. Make a well in the center of the flour. Add the yeast and most of the liquid and mix to a soft dough, add more in milk if necessary. Leave for 2 or 3 minutes, then knead until smooth. Add the currants, sultanas and chopped peel and continue to knead until the dough is shiny. Cover the bowl and let the dough rise in a warm place until it doubles in size. Punch down the dough, by kneading for 3 or 4 minutes. Rest it for a few minutes, then shape it into 1 1/2 inch balls. Put them on to a baking sheet and brush the tops with egg wash. Mark the top of each bun with a cross. Carefully put a cross made of thin strips of shortcrust pastry on to paper. Leave the buns to rise again to double their size, and brush again carefully with egg wash. Bake in a preheated oven at 425° F for 5 minutes, then reduce the heat to iring to 400° F for a further 10 minutes or until golden. Cool on a wire rack.
