Recipe Description
This is a very nice bean salad with a simple, yet flavorful dressing. Tomatoes and fresh Parmesan add even more color to the bright beans.

1 3/4 Ounce(oz)  parmesan, shaved
3 Tablespoon(T)  fresh basil, shredded
2   tomatoes, peeled, seeded and diced
5 4/5 Pound(lb)  young fava beans, shelled
1 Pinch(pn)  pepper, to taste
1 Pinch(pn)  salt, to taste
4 Tablespoon(T)  extra virgin olive oil
1 Clove(clv)  garlic, crushed
1 Teaspoon(t)  white wine vinegar


Bring a large pan of water to a boil. Add the beans, bring back to a boil, then cook for 3 minutes, until just tender. Drain and tip into a serving dish or arrange on individual plates. Whisk together the dressing ingredients and spoon over the beans while still warm. Scatter over the diced tomato, basil and parmesan shavings. Serve immediately at room temperature, in a warmed bowl.
