Here's a simple cheesecake that can be varied to your taste with toppings.

9 221/250 Gram(g)  sour cream
6   large eggs, beaten
1 Teaspoon(t)  vanilla
1 153/200 Gram(g)  splenda
7 377/400 Gram(g)  cream cheese, softened


Beat cream cheese with your electric mixer until very smooth. Add Splenda and vanilla and beat well, then beat in the eggs and sour cream. Pour batter into a buttered 10 inch spring form pan. Place pan in another pan of water about 2 inches deep, and bake at 350 degrees F for 45 to 60 minutes, or until top begins to turn a light toast color. The cake will not be set. Remove from oven and cool, then refrigerate for at least 2 hours before serving. Good served with toppings: fresh fruit, low-carb sauce, or syrup of your choice.
