1 Cup(c)  old fashioned rolled oats, uncooked
1 1/4 Cup(c)  boiling water
1/2 Cup(c)  margarine, room temperature
1 Tablespoon(T)  granulated sugar
1 Cup(c)  brown sugar, firmly packed
1/2 Teaspoon(t)  vanilla extract
3   egg whites, slightly beaten
1 1/2 Cup(c)  unbleached or all purpose flour
1 Teaspoon(t)  baking soda
3/4 Teaspoon(t)  cinnamon, ground
1/4 Teaspoon(t)  nutmeg, ground
1/2 Cup(c)  raisins
1 Tablespoon(T)  margarine, melted
1 Tablespoon(T)  brown sugar(frosting:)
1 Tablespoon(T)  granulated sugar
1 Tablespoon(T)  skim milk
1/2 Teaspoon(t)  vanilla extract

Preparation

Preheat the oven to 350° F. Grease and flour a 9 inch square baking pan. Place the oats in a medium bowl. Pour the boiling water over the oats. Cover and let stand for 20 minutes. In a large mixing bowl, beat the margarine and sugars until light and fluffy. Blend in the vanilla and egg whites. Add the oats mixture and mix well. Sift together the flour, baking soda, cinnamon and nutmeg into a medium bowl. Add to the oats mixture. Add the raisins and mix well. Pour the batter into the prepared pan. Bake for 50 to 55 minutes. Cool completely before frosting and serving. For the frosting: Combine the margarine, sugars and milk in a small saucepan. Bring to a boil and boil 1 minute. Stir in the vanilla and spoon over the cooled cake.
