3   egg whites
1 Pinch(pn)  salt
1 Teaspoon(t)  lemon juice
1 Cup(c)  sugar
1 Teaspoon(t)  lemon zest
5   lemon candies, finely crushed


Preheat oven to 250°F. In large bowl, beat egg whites with salt and lemon juice until foamy. Gradually beat in sugar until stiff peaks form and sugar is dissolved. Fold in lemon zest and the finely crushed candies. Drop by teaspoonfuls onto a baking sheet lined with parchment paper. Bake for 50 to 60 minutes, or until meringues are set and crisp and very light golden brown. Cool on the cookie sheets for 3 minutes, then carefully peel off the parchment paper and place on wire racks to cool.
