Recipe Description
The preparation method used in this lobster recipe is a bit out of the norm. Damp lettuce leaves are wrapped around the tails prior to baking, effectiely steaming the meat in the shell. The result is temptingly tender and flavorful.

6   lobster tails (1/2 pound each)
6 Tablespoon(T)  low fat margarine, melted
1/2 Cup(c)  low sodium chicken broth
1/2 Teaspoon(t)  garlic powder
1 Teaspoon(t)  paprika
12   lettuce leaves, rinsed and drained


Preheat oven to 400° f. Fan cut lobster tails by cutting off the under shell, leaving the tail fan and upper shell in place. Place the lobster shell side down on a baking sheet coated with nonstick spray. Combine chicken broth with garlic powder in a bowl and brush the lobster meat. Sprinkle with paprika. Cover the tails completely with damp lettuce leaves and bake for 15 to 20 minutes, or until the lobster meat is opaque white and tender. Serve the lobster with small melted margarine containers at each setting.
