Recipe Description
My dear friend Lola served this fried rice dish at her last party.  With it's fresh vegetables and fluffy, scrambled eggs, it disappeared quickly!  She was kind enough to share the recipe with me, and now I'm making it for friends and family.

Ingredients

1/2 Tablespoon(T)  sesame oil
6   shallots, peeled and quartered
15 177/200 Gram(g)  cooked chicken, diced
3 Tablespoon(T)  light soy sauce
2   carrots, diced
1   celery stalk, diceded
1   red bell pepper, seeded and diced
5 1/2 Cup(c)  fresh peas
3 1/2 Ounce(oz)  corn kernels, drained
4 Cup(c)  cooked long grain rice
2   large eggs, scrambled

Preparation

Heat the oil in a large skillet over medium heat.  Add the shallots and fry until softened, then add the chicken and 2 tablespoons of the soy sauce and stir fry for 5 to 6 minutes.  Stir in the carrots, celery, bell pepper, peas and corn and stir fry for an additional 5 minutes.  Add the rice and stir thoroughly.  Finally, stir in the scrambled eggs and the remaining soy sauce.  Serve immediately.
