My Canadian-born friend Malka shared this family recipe with me. It's been a favorite of ours for years.

Ingredients

1 1/2 Pound(lb)  small squash
2 Tablespoon(T)  oil
1   large onion, chopped
3   hard boiled eggs
1/4 Teaspoon(t)  salt, or to taste
1/4   garlic powder, to taste
2 Teaspoon(t)  mayonnaise
2 Teaspoon(t)  lemon juice

Preparation

Peel squash and cut lengthwise. Heat oil in a frying pan. Add squash and cook until soft. Drain on paper towels. Fry onion until brown. Add to squash and mash. Add eggs, salt, garlic powder, mayonnaise and lemon juice. Blend. Refrigerate until ready to serve.
