No red sauce here. Just purely rich, earthy mushrooms and creamy goodness.

Ingredients

1   tofu ricotta
12   lasagne noodles, prepared according to package directions
1/2 Cup(c)  all purpose flour mixed with 1/2 cup water to make a slurry
1   salt, to taste
1/4 Teaspoon(t)  ground black pepper
1 Tablespoon(T)  dried basil
1/4 Cup(c)  nutritional yeast
2 Cup(c)  unsweetened soy or other nondairy milk
1 Pound(lb)  sliced button mushrooms
2 Tablespoon(T)  minced garlic
2 Tablespoon(T)  nondairy butter

Preparation

Preheat the oven to 350°F

Have ready an 8-inch (20-cm) square baking dish.

In a frying pan or cast-iron skillet, melt the butter over medium-high heat. Add the garlic and mushrooms and saute for 5 to 7 minutes, or until the mushrooms have reduced in size by about half.

Add the milk, yeast, basil, pepper, and salt.

Bring to a boil and reduce to a simmer. Simmer, uncovered, for 15 minutes,

Slowly stir in the flour slurry and stir to thicken. Remove from the heat.

Place a very thin layer of mushroom sauce in the bottom of the dish. Lay 3 noodles across the bottom, then a layer of mushroom sauce, then a layer of ricotta. Repeat until you run out of ingredients, ending with a final thin layer of sauce and a sprinkling of ricotta.

Bake, covered, for 25 minutes, then uncover and bake for an additional 15 minutes.

Let stand for at least 15 minutes before serving, so that the portions don't fall apart when cut.

Additional notes

Before assembling the lasagna: be sure to keep some mushroom sauce and ricotta to apply on the very top of the lasagna. You will have 4 layers of pasta in all, so divide each ingredient accordingly.
