Any combination of beans works here. Have fun varying the colors, textures and flavors. lf starting with dried beans, cook them separately, since different varieties of beans cook for different times.

Ingredients

1/4 Teaspoon(t)  pepper, freshly ground
1/2 Teaspoon(t)  kosher salt
1 Teaspoon(t)  sugar
2 Tablespoon(T)  extra virgin olive oil
1/4 Cup(c)  red wine vinegar
1 Clove(clv)  garlic, minced
2 Tablespoon(T)  fresh parsley, minced
2   scallions, sliced
1/2 Cup(c)  red onion, thinly sliced
2 Cup(c)  green beans, trimmed, cut into 1 inch pieces, and steamed
1 Cup(c)  cooked white beans, drained and rinsed
1 Cup(c)  cooked chickpeas, drained and rinsed
1 Cup(c)  cooked pinto beans, drained and rinsed

Preparation

In a large bowl, combine all the beans with the onions, scallions and parsley. In a separate bowl, whisk together the remaining ingredients. Pour over the salad, and toss to coat.
