Recipe Description
This maple cake can be made in 2 or 3 layers. If desired, frost it with something simple, so the maple flavor des not become overpowered. A light dusting of confectioner's sugar is a nice complement.

2 1/2 Cup(c)  all purpose flour
5 1/2 Cup(c)  sugar
1/2 Cup(c)  margarine, softened
1/4 Cup(c)  shortening
1 1/2 Cup(c)  buttermilk
1 1/2 Teaspoon(t)  baking soda
3/4 Teaspoon(t)  salt
1 1/2 Teaspoon(t)  maple flavoring
3   eggs


Heat oven to 350 degrees F. Grease and flour 2 round pans, 9 by 2 1/2 inches, or 3 round pans, 8 by 1 1/2 inches. Beat all ingredients in large bowl on medium speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour batter into pans. Bake 30 to 35 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pans. Cool completely.
