Recipe Description
My parents frequent a diner that usually has interesting marinated salads on the table for patrons to munch on while waiting for their orders. This is similar to one that I enjoyed a lot.

Ingredients

1/8 Teaspoon(t)  salt, or to taste.
1 Clove(clv)  garlic, minced
1 Teaspoon(t)  oregano, dried
2 Tablespoon(T)  extra virgin olive oil
3 Tablespoon(T)  distilled white vinegar
1/4 Cup(c)  onions, finely chopped
1/2 Cup(c)  black olives, chopped
1/2 Cup(c)  celery, finely chopped
1 1/2 Cup(c)  chickpeas, cooked
1/8 Teaspoon(t)  black pepper, freshly ground, to taste

Preparation

Place all the ingredients in a large bowl and toss to combine. Let stand at least 30 minutes before serving.
