3 Tablespoon(T)  virgin olive oil
3 Tablespoon(T)  red wine vinegar
2 Tablespoon(T)  parsley, chopped
1 Tablespoon(T)  lemon juice
1 Teaspoon(t)  tarragon, dried
1/8 Teaspoon(t)  pepper
8 Ounce(oz)  mushrooms, sliced
1/4 Cup(c)  pimiento strips
1/4 Cup(c)  green onions, sliced
3 Cup(c)  alfalfa sprouts
3 Cup(c)  lettuce, shredded


In a medium bowl stir together oil, vinegar, parsley, lemon juice, tarragon and pepper. Add mushrooms, pimiento and green onions. Toss to coat evenly. Cover and refrigerate for several hours or overnight, stirring occasionally. In a small bowl toss together sprouts and shredded lettuce. Form into a ring on serving plate. Place mushroom mixture in center of sprout ring. Pour any remaining marinade over mushrooms.
