Ingredients

4   medium tomatoes
2 Clove(clv)  garlic, peeled and crushed
1/2   red onion, thinly sliced and cut into thirds
2 Tablespoon(T)  fresh parsley, minced
1 Tablespoon(T)  extra virgin olive oil
2 Tablespoon(T)  lemon juice
1 Teaspoon(t)  balsamic vinegar
1/2 Teaspoon(t)  yellow mustard seeds, slightly crushed
1/4 Teaspoon(t)  coriander, ground
1/4 Teaspoon(t)  kosher salt
1/4 Teaspoon(t)  pepper, freshly ground

Preparation

Core the tomatoes, then seed them by cutting them in half at their equators and gently pushing the seeds and watery juice out with your fingers. Slice the tomatoes. Put a toothpick through the garlic cloves so they will be easier to find and remove later. Combine the tomatoes, garlic, onions and parsley. Whisk together the remammg ingredients. Pour the dressing over the tomatoes. Stir gently. Let the salad rest 1 hour before serving. Remove and discard the garlic just prior to serving.
