Recipe Description
This recipe is an adaptation of the Green Mealie Bread served in South Africa. Mealies are the African version of our corn. Mealie cobs are plunged into boiling water, cooled, and the corn stripped from the cobs and finely chopped. Sugar, salt, baking powder, milk, and sometimes an egg are added (but no flour), and the mixture is baked or steamed. It is turned out of the pan like a bread and sliced.

1 | Cup(c) | creamed corn | |
2 | Cup(c) | biscuit mix |
Preparation
In a 2 quart bowl, mix all ingreadients except melted butter to form a soft dough. Spread out in greased 9 inch baking pan. Spread melted butter over the bread. Bake at 400 degrees F for 20 minutes, or until done. Cut into squares and serve warm with butter.
