Recipe Description
This delicious dessert is made with a basic meringue mixture, and is the perfect way to enjoy raspberries, or any other soft fruit, depending on availability and personal preference.

1/4 Cup(c)  confectioners' sugar, for dusting
1 Cup(c)  caster (superfine) sugar, plus extra, to taste
2 3/4 Cup(c)  raspberries
1/2 Teaspoon(t)  kirsch liqueur
1 1/4 Cup(c)  whipping cream
4   egg whites

Preparation

Preheat the oven to 300°F. Line two baking sheets with non stick baking parchment and draw two circles: one 9 inches in diameter and the other 8 inches. Fit a piping (icing) bag with a 1 1/2 inch star nozzle. Whisk the egg whites until stiff peaks form, using an electric mixer. Keeping the machine running, add half of the sugar, 1 tbsp at a time. Using a metal spoon, carefully fold in the remaining sugar. Use most of the mixture to pipe inside the circles, then use the remaining meringue mixture to pipe nine miniature meringues on to the surrounding baking parchment. Cook for 50 to 60 minutes, until lightly colored and dry (the small ones will take less time). Peel off the parchment, cool on wire racks and, when cold, store in airtight containers. Whip the cream until soft peaks form, sweeten with sugar and flavor with liqueur. Lay the larger meringue on a serving dish. Spread with three quarters of the cream and raspberries. Add the smaller meringue, spread with the remaining cream, and arrange the small meringues around the edge. Decorate the top with the remaining fruit and dust lightly with icing sugar.

Additional notes

For a non alcoholic version, substitute a few drops of vanilla essence for the kirsch liqueur.
