Although it contains about as much protein as wheat, while also being a gluten free grain, millet appears to be a bit of an underdog in most people's kitchens. This salad will hopefully give you a new appreciation for it, and have you put it back in the spotlight, where it belongs.

1/4 Cup(c)  extra virgin olive oil
1/4 Cup(c)  white wine vinegar
2 Tablespoon(T)  fresh lemon juice
2 Tablespoon(T)  fresh basil leaves, chopped
2 Tablespoon(T)  fresh curly parsley, chopped
1/3 Teaspoon(t)  fine sea salt
1/4 Teaspoon(t)  black pepper, ground, to taste
2 Clove(clv)  garlic, grated
1/4 Cup(c)  red onion, chopped
4 Cup(c)  millet, cooked and cooled
8   dried apricots, thinly sliced
1/4 Cup(c)  pecans, chopped
2/3 Cup(c)  carrot, grated


Combine the oil, vinegar, lemon juice, basil, parsley, salt, pepper, garlic and onion in a medium bowl. Add the millet, apricots, pecans and carrots, and stir until coated with the vinaigrette. Serve chilled.
