1 Cup(c)  cornmeal
1 Cup(c)  unbleached, all purpose white flour
2 1/2 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  baking soda
1/3 Cup(c)  vegetable oil
1/4 Cup(c)  molasses
1 1/4 Cup(c)  buttermilk
2   egg whites


Preheat the oven to 400° F. Coat an 8 by 8 inch pan with non stick spray. Combine the dry ingredients until well blended. Whisk together the wet ingredients, then stir them into the dry. Pour into the pan and bake for 20 minutes, until the center springs back when depressed. Be careful not to overcook or the corn bread wil be heavy and dry. If cooked properly, it will be light and moist and will remain that way for 2 days.
