Recipe Description
These light brown meringues are extremely low in fat and are delicious served on their own, or sandwiched together with a fresh fruit soft cheese filling.

Ingredients

1 Teaspoon(t)  walnuts, finely chopped
2   egg whites
4 119/2000 Gram(g)  light muscovado
1 1/4 Cup(c)  sugar

Preparation

Preheat the oven to 325 degrees F. Line two baking sheets with non stick baking paper. Press the sugar through a metal sieve. Whisk the egg whites in a clean, dry bowl, until very stiff and dry, then whisk in the sugar, 1 tablespoon at a time, until the meringue is very thick and glossy. Spoon small mounds of the meringue mixture on to the prepared baking sheets. Sprinkle the meringues with the chopped walnuts. Bake for 30 minutes.  Cool for 5 minutes on the baking sheets, then leave on a wire rack.
