Recipe Description
Grilled mussels are a surprise treat for summertime barbecue parties. Serve the mussels in large shallow bowls, with their juice and the buttery sauce. They're also great with crusty bread, or served over pasta.

Ingredients

1/4 Teaspoon(t)  chili oil, or crushed red peppers
1 1/2 Teaspoon(t)  celery salt
2 Teaspoon(t)  sage leaves, dried
2 Teaspoon(t)  thyme leaves, dried
1/2 Cup(c)  margarine, melted
2 Pound(lb)  mussels in shells (60 to 72 mussels)

Preparation

Discard any broken shell or open mussels. Scrub remaining mussels in cool water, removing any barnacles with a dull paring knife. Remove beards by tugging them away from shells. Place mussels in container. Cover with cool water. Agitate water by hand, then drain and discard water. Repeat several times until water runs clear. Drain. Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Cover and grill mussels 4 inches from medium heat 3 to 5 minutes, or until mussels open, removing mussels as they open. Discard unopened mussels. Melt margarine in small 8 inch skillet over medium heat. Stir in remaining ingredients. Reduce heat to low and cover to keep warm, or reheat just before serving. Place mussels on platter, or divide among shallow soup bowls. Drizzle hot margarine mixture over mussels.

Additional notes

Tip: Place mussels on grill with rounded sides down to catch juices in the bottom half of the shell. Be careful when removing mussels from the grill. The liquid is hot!
