Unlike in other salads, the color of the green beans won't fade here, even after several days, which makes this salad ideal for preparing ahead or for picnics.

Ingredients

2 Pound(lb)  green beans, trimmed and halved if large
1/4 Cup(c)  red onions, thinly sliced
2 Tablespoon(T)  fresh dill, minced
1 Tablespoon(T)  balsamic vinegar
1 Tablespoon(T)  red wine vinegar
1 Teaspoon(t)  sugar
2 Tablespoon(T)  extra virgin olive oil
1 1/2 Tablespoon(T)  dijon mustard
1/4 Teaspoon(t)  kosher salt
1/4 Teaspoon(t)  pepper, freshly ground

Preparation

Bring a large pot of salted water to a boil (about 2 teaspoons salt per quart). Drop in the green beans, bring back to a boil, and cook about 2 minutes until crisp tender. Drain and immerse the beans in a bowl of cold water to stop the cooking process. Toss the beans with the onions and dill. Whisk together the remaining ingredients and toss with the salad. Bring to room temperature before serving.
