Recipe Description
For the diet conscious snacker, plain popcorn is a perfect choice: it's good tasting, high in fiber and lower in fat than traditional favorites like peanuts and chips. Every now and then, though, you'll want to dress up your popcorn, as in this recipe. When you're in the mood for a splurge, top the puffy kernels with chiles, olives, and cheese for a nacho-style treat.

1 Pinch(pn)  salt
1/4 Cup(c)  ripe olives, sliced
2 Cup(c)  cheddar cheese, finely shredded
3 Quart(q)  air or oil popped popcorn (about 1/2 cup popcorn kernels)
1/2 Teaspoon(t)  cumin, ground
2 Teaspoon(t)  chili powder
1   jalapeno chile, seeded and minced
1/4 Cup(c)  butter


Melt butter in a wide frying pan over medium heat. Add chile, chili powder and cumin. Cook, stirring, until chile is soft, about 5 minutes. Spread popcorn in a 12 by 17 inch roasting pan. Pour butter mixture over top and mix well. Sprinkle with cheese and olives. Season to taste with salt. Bake in a 300 degree F oven, stirring every 5 minutes, until cheese is melted, about 15 minutes. Pour into a shallow bowl and serve hot.
