Recipe Description
Afternoon tea served at Glin Castle in Co. Limerick was a memorable experience. Nancy's warm griddle bread, which she made on an iron pan, was legendary, and served with fresh honey or jam.

1 Pound(lb)  flour
1 Teaspoon(t)  baking soda
1 Pinch(pn)  salt, to tatse
1 1/2 Cup(c)  fresh milk


Seive flour on to a tray rather than into a bowl. Add a level teaspoon of baking soda, rubbed between the palms of the hands to eliminate any lumps. Mix dry ingredients well and then add enough fresh milk to make a soft but not sticky dough. Flatten out to about 1 1/2 inches thick and bake on a preheated pan about 30 minutes, 15 minutes on each side.

Note: a non-stick pan works very wellforgriddle bread
