Nanna Bev's Chocolate Cake

My Nana Bev used to make this for me, and I thought is was the best cake ever! She gave me the recipe when I got older, and now I want to share it, as my family simply loves it.

1 1/2 Cup(c)  sugar
1 Cup(c)  vegetable oil
2   eggs
1 Cup(c)  sour milk or buttermilk
3 Tablespoon(T)  cocoa
1 Cup(c)  boiling water
2 1/2 Cup(c)  all purpose flour, sifted
2 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
1/4 Teaspoon(t)  salt
1 Teaspoon(t)  vanilla


Cream the sugar and shortening together until lemon colored. Then beat in eggs and sour milk or buttermilk. Pour boiling water over cocoa and stir until it thickens slightly. Add to the creamed mixture. Add flour, baking powder, soda, salt and vanilla, and beat well. Pour into a greased and floured 9 by 13 inch pan or two 9 inch layer pans. Bake 20 to 25 minutes at 350 degrees F.
