Similar in flavor to oatmeal cookies, these muffins taste like an indulgent treat, but are really low in fat.

3 1/2000 Gram(g)  rolled oats
50 Teaspoon(t)  buttermilk
4 59/250 Gram(g)  butter, at room tempetature
3 53/100 Gram(g)  dark brown sugar
1   egg, at room temperature
4 59/250 Gram(g)  flour
1 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  bicarbonate of soda
1/4 Teaspoon(t)  salt
1 59/1000 Gram(g)  raisins


In a bowl, combine the oats and buttermilk and let soak for 1 hour. Lightly grease a 12 cup muffin tin or use paper cases. Preheat the oven to 400° F. With an electric mixer, cream the butter and sugar until light and fluffy. Beat in the egg. In another bowl, sift the flour, baking powder, bicarbonate of soda and salt. Stir into the butter mixture, alternating with the oat mixture. Fold in the raisins. Do not over mix. Fill the prepared cups two thirds full. Bake until a skewer inserted in the center comes out clean, 20 to 25 minutes. Transfer to a rack to cool.
