Oatmeal Cake

This wholesome cake is topped with sweet coconut and crunchy pecans. Delicious for brunch, or an after dinner dessert.

1 Cup(c)  granulated sugar
1 1/4 Cup(c)  boiling water
1 Cup(c)  oatmeal
1/2 Cup(c)  margarine, softened
2/3 Cup(c)  brown sugar
2   eggs
1 1/2 Cup(c)  flour
1 Teaspoon(t)  baking soda
2 Teaspoon(t)  baking powder
1 Teaspoon(t)  cinnamon
1 Teaspoon(t)  salt
1/4 Cup(c)  butter, softened
2/3 Cup(c)  brown sugar
1/4 Cup(c)  milk
1 Cup(c)  coconut
1 Cup(c)  pecans, chopped


Pour boiling water over oatmeal. Set aside. Cream together margarine, sugars and eggs. Then add oatmeal mixture and the remaining ingredients. Pour batter into a greased 9 by 13 inch baking pan and bake at 350 degrees F for 30 minutes. Cool cake and spread with topping. Put under broiler until topping bubbles, about 2 minutes.
