Oatmeal Cookie Topped Apple Crumble

2   granny smith apples, or other green apples, unpeeled, cored and cubed
1   golden delicious apple, or other yellow apple, unpeeled, cored and cubed
1   red delicious apple, or other red apple, unpeeled, cored and cubed
1/2 Cup(c)  whole wheat pastry flour
1 Tablespoon(T)  pure maple syrup
3 Tablespoon(T)  apple juice
1/2 Cup(c)  whole wheat pastry flour
1/2 Cup(c)  quick cooking oats
1/2 Teaspoon(t)  cinnamon, ground
1/4 Teaspoon(t)  baking soda
1/4 Teaspoon(t)  fine sea salt
2 Tablespoon(T)  creamy natural peanut butter
2 Tablespoon(T)  canola oil
2 Tablespoon(T)  plain soy or other non dairy milk
1/3 Cup(c)  sucanat
1 Teaspoon(t)  pure vanilla extract
1/4 Cup(c)  raisins (optional)


Preheat the oven to 350°F. Have an 8 inch baking dish handy. To make the apples: Combine the apples, flour, syrup, and juice in the baking dish and stir to coat. Cover with foil, and bake for 30 minutes. To make the topping: Whisk together the flour, oats, cinnamon, baking soda and salt in a medium sized bowl. In a small sized bowl, whisk together the peanut butter, oil, milk, sugar and vanilla until emulsified. Stir the wet ingredients into the dry. Stir in the raisins, if using. Remove the foil. Crumble the cookie dough evenly on top of the apples. Bake for another 10 to 15 minutes, until the apples are tender and the cookie topping is golden brown and cooked through. Serve warm or at room temperature, or even cold the next morning.
