2 3023/4000 Kilogram(kg)  firm baking apples
1 153/200 Gram(g)  sugar
2 Teaspoon(t)  cinnamon, ground
1   lemon, rind grated and juiced
1 59/1000 Gram(g)  butter, diced
3 Tablespoon(T)  honey
10 121/2000 Gram(g)  plain flour
1 Teaspoon(t)  salt
4 119/2000 Gram(g)  cold butter, cut into pieces
2 59/500 Gram(g)  cold vegetable fat, cut into pieces
6 Tablespoon(T)  iced water

Preparation

For the crust:  Sift the flour and salt into a bowl.  Add the butter and fat and rub in with your fingertips until the mixture resembles coarse breadcrumbs.  With a fork, stir in just enough water to bind the dough.  Gather into a ball, wrap in clear film, and refrigerate for at least 20 minutes.  Place pie tin on a baking sheet in the center of the oven and preheat to 400°F.  Peel, core, and slice the apples.  Combine the sugar and cinnamon in a bowl.  Add the apples, lemon rind and juice and stir.   On a lightly floured surface, roll out rhe dough to a circle about 12 inches in diameter.  Transfer to a 9 inch diameter deep pie dish.  Leave the dough hanging over the edge.  Fill with the apple slices.  Fold in the edges and crimp loosely for a decorative border.  Dot the apples with diced butter.  Bake on the hot sheet until the pastry is golden and the apples are tender, about 45 minutes.  Melt the honey in a saucepan and brush over the apples to glaze.  Serve warm or at room temperature.
