Orange Cheesecake With Caramelized Lemon Slices

This simple cheesecake is beautifully topped with carmelized lemons. A trick that may sound difficult, but is really quite easy and has splendid gourmet appeal.

1 1/2 Cup(c)  cottage cheese
4   egg yolks
2/3 Cup(c)  superfine sugar
1   orange rind, finely grated
1/4 Cup(c)  fresh orange juice
1/2 Cup(c)  almonds, ground
2 Cup(c)  authentic greek yogurt
2   lemons, sliced thinly
2/3 Cup(c)  superfine sugar
2/3 Cup(c)  water


Grease and line the base of an 8 inch cake pan with removable sides with waxed paper. Push the cottage cheese through a sieve into a bowl. Gradually beat the egg yolks into the cheese, then add the sugar, orange rind and orange juice and beat until smooth. Carefully fold in the ground almonds. Turn the mixture into the prepared pan and bake in a preheated oven, 350° F, for about 35 minutes, until set. When cooked, turn off the oven, open the oven door, and leave ajar. Allow the cheesecake to remain in the oven for 2 to 3 hours to cool. Meanwhile, make the caramelized lemons. Put the lemon slices, discarding any seeds, the sugar and water in a small pan and bring to a boil, then simmer for about 45 minutes, shaking the pan occasionally, until most of the liquid has evaporated and the lemons have caramelized. Watch very carefully toward the end of cooking that the lemons do not burn. Drain the lemon slices on a wire rack. When the cheesecake has cooled, carefully remove from the pan and decorate with the caramelized lemons. Serve accompanied with Greek yogurt.
