1 Cup(c)  whole wheat flour
1 Cup(c)  unbleached, all purpose white flour
1/2 Cup(c)  cornmeal
1 Teaspoon(t)  baking powder
2 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  salt
1 1/2 Teaspoon(t)  poppy seeds
1   orange
1 Cup(c)  plain non fat yogurt
2   egg whites
3 Tablespoon(T)  vegetable oil
1/3 Cup(c)  honey


Preheat the oven to 350° F. Coat 12 muffin cups with non stick spray. Sift together the dry ingredients and stir. Zest the orange until you have 1 tablespoon of zest, and then squeeze out 1/3 cup of juice. Put the zest, juice, yogurt, egg whites, oil and honey in a bowl. Beat until slightly foamy. Pour the wet ingredients into the dry. Gently but quickly fold the two together until an evenly moist batter forms. Fill the muffin cups about three quarters full. Bake for 25 minutes, until the muffins are golden and firm to the touch.
