3 Tablespoon(T)  toasted sesame seeds, ground with mortar and pestle
2 Tablespoon(T)  tamari sauce
1 Tablespoon(T)  honey
1 1/2 Pound(lb)  fresh spinach, washed thoroughly and trimmed


Bring the water to a boil in a saucepan, toss in the spinach, cover, and cook about 30 seconds, until wilted. Drain the spinach (reserve the liquid for other recipes, such as a soup, if you like) and rinse it in a colander in cold water. Drain well, and transfer to a serving bowl. In a small bowl, combine the honey, tamari sauce and sesame seeds. Pour this dressing over the spinach, toss, and serve.
