Recipe Description
Boiled sweet potatoes go mushy, and lack the flavor of baked sweets. But parboiled and then crisped in a pan, they have it all! Flavor, texture and a cute shape.

Ingredients

6 Cup(c)  sweet potatoes, cut into 1/4 inch cubes, about 6 cups
2 Tablespoon(T)  vegetable oil
1/2 Teaspoon(t)  kosher salt
1/4 Teaspoon(t)  pepper, freshly ground
2 Tablespoon(T)  fresh parsley, chopped

Preparation

Drop the potatoes into the boiling water and cook for about 5 minutes, until they just begin to get tender on the outside but remain crisp inside. Immediately drain and turn out onto aclean kitchen cloth towel to dry. Heat the oil over high heat in a large nonstick skillet. Add the cubes, shaking the pan and stirring frequently. Cook until the cubes crisp, about 15 minutes. Cook them in two batches if they don't fit comfortably in the skillet.) Toss in the salt, pepper and parsley and serve.
