Recipe Description
The secret to these tender pancakes, is the cake and pastry flour.  They may be served with the usual maple syrup, or spread with marmalade.  You won't miss the butter.

3 Tablespoon(T)  vegetable oil
1 Cup(c)  fortified orange juice
1/2 Teaspoon(t)  salt
1   egg
1/2 Teaspoon(t)  baking soda
2 Teaspoon(t)  baking powder
1/4 Cup(c)  granulated sugar
2 Cup(c)  cake and pastry flour


In a medium bowl, sift together flour, sugar, baking powder, baking soda and salt.  In a measuring cup, whisk together egg, orange juice and oil.  Pour into dry ingredients, stirring with a fork just until dry ingredients are moistened.  Heat a nonstick skillet over medium high heat.  For each pancake, spoon 1/4 cup batter into pan.  Cook until bubbles appear and break.  Flip and cook until second side is golden brown.  Serve at once.
