Ingredients

1/4 Cup(c)  warm water (105 to 115 degrees f)
16 Ounce(oz)  peaches in syrup, drained and thinly diced
1/4 Cup(c)  sugar
2 Cup(c)  all purpose flour
2   eggs
1 Tablespoon(T)  sugar
1/2 Cup(c)  all purpose flour
1/4 Cup(c)  brown sugar
1/4 Cup(c)  granulated sugar
1/4 Cup(c)  butter, melted
1/2 Cup(c)  milk, warmed
2 Cup(c)  all purpose flour
2 Tablespoon(T)  all purpose flour
1/4 Package(pk)  active dry yeast
1/4 Cup(c)  butter, chilled
1 Teaspoon(t)  vanilla extract
1 Pinch(pn)  salt

Preparation

In a small bowl, combine warm water and yeast. Add 1 tablespoon sugar and 2 tablespoons flour. Let stand in a warm place until yeast mixture turns bubbly, 5 to 10 minutes. Place eggs and 1/4 cup sugar in a large bowl. Beat until pale and fluffy. Add melted butter or margarine and milk to egg mixture. Beat until well blended. While beating, slowly add 2 cups flour to make a soft dough. Using your hands, turn dough out on a floured surface and knead 8 to 10 minutes, until smooth and elastic. Place dough in a greased bowl, turning to coat all sides. Cover with a clean damp cloth. Let rise in a warm place, free from drafts, until doubled in bulk. Place dough on a lightly floured surface. Punch dough down, then form it into a ball. Roll out dough into a 13 by 9 inch rectangle, forming corners with your hands. Grease a 13 by 9 inch baking pan. Fit dough into greased pan. Cover with a cloth and let rise in a warm place 1 hour or until doubled in bulk.. Preheat oven to 375 degrees F. Prepare crunchy topping and set aside. With a paper towel, pat peach slices dry. Arrange peaches on top of dough, as desired. Sprinkle topping over peaches and dough. Bake 30 minutes or until topping turns a light golden brown. Let cool in pan.
