1/4 Cup(c)  candied ginger, finely chopped, or 1/2 cup raisins
1/2 Cup(c)  soy milk mayo
1/2 Cup(c)  creamy or crunchy natural peanut butter
1 Cup(c)  plain soy milk
2/3 Cup(c)  raw sugar
2 Teaspoon(t)  pure vanilla extract
1 1/2 Cup(c)  whole wheat pastry flour
2 Tablespoon(T)  cornstarch
2 Teaspoon(t)  cinnamon, ground
1 1/2 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  fine sea salt

Preparation

Preheat the oven to 350°F (180°C, or gas mark 4). Lightly coat an 8 x 4-inch (20 x 10-cm) loaf pan with spray. In a medium-size bowl, combine the mayonnaise, peanut butter, milk, sugar, and vanilla until emulsified. In a large-size bowl, whisk together the flour, cornstarch, cinnamon, baking powder, baking soda, and salt. Fold the wet ingredients into the dry, being careful not to overmix. Fold in the candied ginger. Pour the batter into the prepared pan. Bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean. Loosely cover with foil if it browns up too quickly while baking. Place on a wire rack. still in the pan, for about 15 minutes before transferring directly to the rack, and let cool completely before slicing or storing.

Additional notes

With its pound cake-like good looks, this delicious quick bread gets even better eaten the day after it's baked. If you are feeling particularly sinful, replace the raisins with chocolate chips or chunks. Other dried or even fresh fruit (raspberries, blueberries, even cranberries) would be perfect too.
