Be sure to slice the pears thinly for this recipe. You will find the batter stiff and heavy but the pears give moisture during baking.

1 Cup(c)  whole wheat flour
1 Cup(c)  all purpose flour
1 Cup(c)  granulated sugar
1 Teaspoon(t)  baking soda
1 Teaspoon(t)  ginger, ground
1/2 Teaspoon(t)  nutmeg, ground
1/2 Teaspoon(t)  salt
2 Cup(c)  pears, thinly sliced and peeled
1/2 Cup(c)  vegetable oil
1/4 Cup(c)  toasted almonds, chopped
1/4 Cup(c)  crystallized ginger, chopped
1 Tablespoon(T)  lemon zest, grated
1 Tablespoon(T)  lemon juice, freshly squeezed


In a large bowl, stir together whole wheat flour, all purpose flour, sugar, baking soda, ground ginger, nutmeg, and salt. Add pears. In a small bowl, whisk together eggs, oil, almonds, crystallized ginger, lemon zest and juice. Using a fork, stir into dry ingredients just until moistened. Spoon into prepared pan. Bake in preheated 350 degree F oven for 60 to 70 minutes, or until a tester inserted in the center comes out clean. Let cool in pan on a wire rack for at least 15 minutes. Remove from pan and let cool completely on rack before slicing.

Additional notes

Toasting nuts intensifies their flavor. To toast almonds, bake in preheated 350°F oven for 10 to 12 minutes, or until golden brown and fragrant.
