These cookies aren't the prettiest gluten free cookies in this book, but they do taste good! It's almost like the flavor of the nut is first to be noticed, then the oats, but then you can't quite be sure.

1 1/2 Teaspoon(t)  vanilla extract
1/2 Teaspoon(t)  salt
1 Tablespoon(T)  baking powder
3/4 Tablespoon(T)  baking soda
1 Cup(c)  oat flour
2   eggs
1/2 Cup(c)  sugar
1/4 Pound(lb)  butter


Preheat the oven to 375°F. Grease a cookie sheet. Cream the butter and sugar in a medium sized bowl. Add the eggs. Mix until lighter and thicker. Add the other ingredients and beat well. Drop by rounded teaspoonfuls onto the prepared pan. Bake for approximately 11 minutes, until lightly browned on top and golden on the bottom. Transfer from the cookie sheet to a rack and let cool completely.
