Vegetarians will like this as a main course salad. Use the recipe for Picnic Potato Salad for the salad base. I like the texture and flavor that eggs bring to the recipe.

3 Tablespoon(T)  pickle relish
1 1/2 Tablespoon(T)  dijon mustard
1/2 Teaspoon(t)  worcestershire sauce
1/4 Teaspoon(t)  tabasco sauce
3   hard boiled eggs, 2 yolks discarded


Follow the directions for Picnic Potato salad except in Step 2, whisk in the mustard, Worcestershire sauce and Tabasco with the mayonnaise. Chop the eggs and toss in with the scallions and celery.
