Recipe Description
Golden potato pancakes have been a long time favorite in our household. My Irish mother prepared these for all the wee ones, and now I do the same for my children.

Ingredients

4 Slice(sli)  bacon, chopped
1 Pound(lb)  mashed potatoes
2 Tablespoon(T)  plain white flour
1 Pinch(pn)  salt, to taste
2 Tablespoon(T)  butter
1 Pinch(pn)  pepper, to taste

Preparation

Fry the bacon until crisp. Remove and drain on paper towels. Stir the bacon into the mashed potatoes with the flour, salt and pepper. Form the mixture into four cakes. Heat the butter in a frying pan, add the cakes and fry for about 5 minutes on each side until golden and crisp.
