These golden, crisp waffles are gluten free and can be topped with almost anything. My family loves fresh fruit, but go with whatever moves you.

Ingredients

2   extra large eggs
3/4 Cup(c)  ener-g brand potato mix
1 1/2 Teaspoon(t)  unsweetened apple juice concentrate
1/2 Teaspoon(t)  salt
2 Tablespoon(T)  vegetable oil
1/2 Cup(c)  water
2 1/4 Teaspoon(t)  featherweight baking powder

Preparation

Separate your eggs, placing the egg yolks in a large bowl and the egg whites in a small bowl. Using a hand-operated mechanical beater, beat egg whites until very stiff. They should not fall out of the bowl when the bowl is turned upside down. Set whites aside. Add potato mix, concentrate, salt, oil, and water to egg yolks. Mix ingredients well. Rebeat egg whites to make sure they are stiff. Quickly add baking powder to yolk mixture and mix well. Fold in stiff egg whites. Pour half of batter into preheated large waffle iron. Cook waffles until crisp so they will not be doughy inside. Loosen waffles from iron and place on serving platter. Pour rest of batter into hot waffle iron and cook waffles as before.
