A quick version of potato salad made with scallions and a sprinkling of fresh chives.

2 Tablespoon(T)  fresh chives, snipped
1 Pinch(pn)  salt, to taste
1 Teaspoon(t)  paprika, plus extra pinch to garnish
1 Cup(c)  mayonnaise
8   scallions
1 Pound(lb)  new potatoes
1 Pinch(pn)  pepper, to taste


Bring a large pan of lightly salted water to a boil. Add the potatoes and cook for 10 to 15 minutes, or until just tender. Drain the potatoes and rinse them under cold running water until completely cold. Drain again. Transfer the potatoes to a bowl and reserve until required. Using a sharp knife, slice the scallions thinly on the diagonal. Mix the mayonnaise, paprika, salt and pepper to taste together in a bowl. Pour the mixture over the potatoes. Add the scallions to the potatoes and toss together. Transfer the potato salad to a serving bowl and sprinkle with snipped chives and a pinch of paprika. Cover and let chill in the refrigerator until required.
