Recipe Description
In the south, grits go with everything.  These grits are rich and creamy, and can be a complement to many different dishes.

1 Tablespoon(T)  butter
2 Tablespoon(T)  half and half, plus more as an accompaniment
3/4 Cup(c)  quick grits
1/2 Teaspoon(t)  salt
3 Cup(c)  water


In a large saucepan over high heat, bring water and salt to a boil.  Stir in grits.  Reduce heat to low and cook, covered, stirring occasionally, until thick and fluffy, about 5 minutes.  Stir in half and half and butter.  Spoon into bowls.  Pass additional half and half at the table.

Additional notes

Variations:  Add 1 cup grated cheddar cheese and stir until melted, about 1 minute.  Add 1 cup raisins or chopped dates.
