1/4 Teaspoon(t)  pepper, freshly ground
1/4 Teaspoon(t)  kosher salt
1 Tablespoon(T)  fresh chives, chopped
1 Tablespoon(T)  fresh parsley, chopped
1 Cup(c)  carrot, finely diced
2 Cup(c)  reduced sodium defatted chicken broth
1 Cup(c)  uncooked quinoa


Put the quinoa in a fine mesh strainer and wash it very well under cool running water. Place in a heavy bottomed pot. Cook over moderately high heat until you hear or see a grain pop. Carefully pour in the broth (it will splatter on the hot surface). Stir in the carrot. Cover and simmer for 15 minutes. Stir in the herbs, salt and pepper. Cook for 3 minutes longer.
