Recipe Description
Fun and easy to prepare, these cookies can be cut out in a variety of ways. Serve them at your next holiday party.

Ingredients

3/4 Cup(c)  vegetable shortening
3/4 Cup(c)  brown rice syrup
4   egg whites, or 2 extra large eggs
1 Teaspoon(t)  vanilla
2 1/4 Cup(c)  brown rice flour, tapped lightly 4 to 5 times
1 3/4 Teaspoon(t)  featherweight baking powder
1 Teaspoon(t)  salt
3 Tablespoon(T)  brown rice flour, for patting out dough

Preparation

In a large bowl, cream together well shortening and brown rice syrup. Add eggs and vanilla and mix together well. In a medium sized bowl, stir together brown rice flour, baking powder and salt, using a large wooden spoon. Add flour mixture to shortening mixture slowly, stirring ingredients well. Chill cookie dough uncovered for 1 1/2 hours in the refrigerator. Preheat oven to 325°F. Grease two cookie sheets with oil. You will also need a large glass or large circle cookie cutter and a spatula. Spread a small portion of additional brown rice flour over a small section of counter surface. Take a small portion of dough at a time and knead in a little flour to make dough less sticky. Sprinkle surface with brown rice flour again and pat dough out to 1/4 inch thickness. Cut into circles using a large glass or large circle cookie cutters. Use a spatula to transfer cookies to prepared cookie sheets. Repeat procedure until all dough is used. Bake 10 to 11 minutes, or until cookies look dry and have just a hint of gold on bottoms. Rotate cookie sheets at halfway point to achieve even baking. Remove pans from oven, then remove cookies from pans and place on counter top until completely cool. Store in an airtight container in refrigerator or freeze.

Additional notes

Variation: For holidays, dough can be cut out with various cookie cutter shapes, such as Christmas trees, stars, hearts, rabbits, or Easter eggs.
